Winemaking - Rockgarden Mourvedre

This wine was saignee to concentrate colors, flavors, and aromas.  There was a 48 hour cold soak to extract more anthocyanins from the skins before innoculation.  The Cap was punched down three times per day.  Once pressed, all this wine went into 1 barrel, a French puncheon.
